Soup-er Easy



Chicken & Spinach Tortellini Soup

2 (8oz) boneless, skinless chicken breasts
1 tsp vegetable oil (*i substituted 1 tsp olive oil instead)
1 box of Campbell's Organic free range Chicken broth (or if you have homemade frozen, use it up!)
2 cups, packed and chopped spinach (yeah right, maybe only 1 cup necessary)
1 large coarsely chopped tomato
1 celery stalk sliced (i used two)
1 1/4 cups refrigerated cheese-filled tortellini (i only used 1 cup-hey, it's what i had!)
1 clove of garlic minced
1/4 tsp dried oregano
1/8 tsp black pepper

1. Brown chicken in oil, in heavy bottomed pan.
2. Add broth and vegetables. Heat to a boil.
3. Stir in remaining ingredients.
4. Simmer covered until cooked through--maybe 15 minutes.


See, i told you it was EASY!
And apparently, i like changing recipes... i only need to have a recipe to see what i could put in it? Then, i just throw it all in according to me!

I really love the Cook With Campbell's website! They provide many suggestions or ideas and even have some in a video format. I like that i can type in the ingredients i have on hand and it will give me a list of things i might be able to make.

This recipe took no longer than half an hour, so i encourage you to give a try! Yummy!

Sami - totally dumb question. Do you cut into little pieces before browning in the pot or just cook the breasts whole and then cut up before adding everything else? I would be inclined to do the latter but wanted to check with you. Sounds like a great meal for our family that I'll be trying soon!

I actually started with frozen chicken breasts, so i had to cook whole then cutup. It would work fine either way though.
