BAA...on the Menu

My family seems to like lamb. It's actually kind of a weird/newer development, because for myself to eat lamb... i need to forget. that. it. is. lamb. The kiddos however, love to eat it right off the bone!

I made Accordian-like potatoes as a side-dish: using olive oil, balsamic vinegar, garlic, thyme & rosemary. Slice potatoes (but not entirely through) and bake at 350F for 45mins.
This is how the potatoes looked all done!
I am in "empty the freezer" mode right now, so i needed to cook up a rack of lamb (organic & free-range). I mixed rosemary, thyme and sage with the breadcrumbs and added one egg. I first put a layer of prepared mustard onto the lamb, then stuck the breadcrumbs to that. I also added a bit of olive oil and balsamic.

Cooked at 425F, for 30minutes (medium-rare).

Unfortunately, we must have been kerfuffled at dinner time because i forgot to take a picture of the lamb all done. Oh well. I have to say, i hadn't used mustard before when cooking lamb, but it really made it tasty! I dropped the mint (in favour of the mustard) and am glad i did so.

No formal recipe here...just the stuff i added.

ENJOY!

I especially like the addition of thyme and rosemary. They really enhance the flavor of anything you add them to.

Hhhmm..I never ate lamb until I moved over here. We buy Doner Kebabs wich are to die for that they use thinly sliced pieces of lamb..Im so loving it. I dont think I would ever buy it to make something with it myself but a doner everynow and then hits the spot.

I love making potatoes the same way you do!!
