Recipe Time! With Resolutions in Check!



With a New Year upon us, many decide to live life a little healthier or to even *ack*, shed a few pounds.  So after my friend (Thanks Charlotte!) suggested this yummy cake to me, i decided to give it a whirl for Xman's birthday.

Quinoa Chocolate Cake *Gluten Free*

2/3 c. Quinoa
Cook Quinoa as per package instructions. Let cool.

Preheat oven to 350F.
Lightly grease 2 round cake pans or 1 jelly roll pan (cookie sheet with sides).

1/3 c milk
4 eggs
1 tsp vanilla
3/4 c melted margarine (*i used shortening)
1 1/2 c sugar
1 c. cocoa
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

Combine milk, eggs and vanilla in a blender or food processor.  Add cooked quinoa and melted margarine and blend well.  In a bowl, blend together all remaining ingredients. Add contents from the blender to the bowl and mix well.
Pour into pan(s) and bake for 40 - 45 min.  Frost if desired. This will freeze well also.



Just to make you all mad at my Maple Syrup Surplus:  i added 1/8 cup Pure Maple syrup to 1 cup of Cream Cheese.  Add icing sugar for desired consistency.  Yummy!

That is very interesting. I love the fact that it gets rid of flour. Although it has the sugar in it, but hey we can't win them all right. LOL.
Omg looks yummy and still fattening! I will have to wait until I loose some weight to eat that!

Hey this looks awesome! I would have never thought to replace flour with quinoa but now I'm wondering what other recipes I can sub it for!

This looks good. I'll have to tell my husband about it (he's a fan of quinoa).

Have you heard of xylitol? That could be used as a healthy substitute for sugar.
