Things To Do With Too Much Zucchini?

Thanks to the Joy of Baking, we have found a timeless winner of Zucchini Breads!
Easy enough to throw in whatever may be lying around (be it carrots or banana!),
without giving up its power packed veggie goodness!

1/2 cup pecans or walnuts
1 cup shredded/grated  raw zucchini
1/2 cup peeled and grated raw apple
1 1/2 cup all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg (we used pumpkin pie spice!)
1/2 cup canola/corn/safflower oil
1 cup white sugar
2 large eggs
1 tsp pure vanilla extract
1/2 cup shredded coconut

Grate zucchini and apple.
In a large bowl, whisk flour, baking soda, baking powder, salt, gr cinnamon, and nutmeg.
Beat oil, sugar, eggs, vanilla until well blended. 
Beat in gr. zucchini and apple.
Add flour mixture, until combined.
Fold in nuts and coconut.

350 F degrees
50-60 minutes
Makes one 9 x 5 x 3 inch loaf pan.

Sounds good! I always laugh when people ask me, "have you made zucchini bread?" YES! Of course I have and usually recipes only call for like 1-2 cups, which is like a fourth of a zucchini. This recipe does sounds good though and I am always looking to try a new one!

Ooh yummy!! I'm sure this smells amazing when cooking!! I might need to try it , I have never made zucchini bread before! We don't even have zucchinis here lol we have courgettes which I think are the same x
