6 Delicious Ways to Use Up Your Rhubarb





Nothing says summer like a huge plant of Rhubarb growing in the backyard! But what to do with the endless stalks?


The distinctively sour taste and the glorious red hue of rhubarb make for interesting recipes, all with varying degrees of tart to please.

Strawberry Rhubarb Jam dresses up the morning toast at breakfast, while a fresh, hot, Strawberry Rhubarb pie sliced up after dinner with ice cream always finishes a meal off nicely!

But after that, what else is there to make?

Below, I've compiled a list of our favourite Rhubarb recipes, to help you try something new and to help your palate scream SUMMER!  









Raspberry Rhubarb Muffins

Makes 12

1 cup all purpose flour
1/2 cup natural wheat bran
1 cup rolled oats
1/4 tsp sea salt
1 egg
1 cup brown sugar
1/2 cup butter or margarine, melted
1/4 tsp cinnamon and nutmeg
3 cups chopped rhubarb


In a bowl, whisk flour, sea salt, wheat bran, cinnamon, nutmeg and rolled oats.
In mixing bowl, combine melted butter, brown sugar, and egg, 
Slowly mix the dry goods into the wet mixture.
Spoon into muffin cups and bake at 350F for 20-25 minutes.
