Nothing says summer like a huge plant of Rhubarb growing in the backyard! But what to do with the endless stalks?

The distinctively sour taste and the glorious red hue of rhubarb make for interesting recipes, all with varying degrees of tart to please.

Strawberry Rhubarb Jam dresses up the morning toast at breakfast, while a fresh, hot, Strawberry Rhubarb pie sliced up after dinner with ice cream always finishes a meal off nicely!

But after that, what else is there to make?

Below, I've compiled a list of our favourite Rhubarb recipes, to help you try something new and to help your palate scream SUMMER!

NOTE: The best thing about rhubarb is the potential for sharing! If you find yourself with TOO much rhubarb, look for a neighbour or friend in need. Or, if you find yourself invited to dinner, instead of showing up with wine, bring the host a huge bunch of rhubarb. Trust me... you'll be invited back! ;)
