Pumpkin, Banana and Coconut Muffins #GlutenFree

Please do not be put off by this horrible picture!  There was no way to make these muffins look good in a photo-- I tried.  But, if you're willing enough to give them a whirl... they taste super yummy!

Kid tested, parent approved.  They are also Gluten-Free!

Pumpkin, Banana & Coconut Muffins

1 cup Coconut Flour
3 Eggs
1 cup Pumpkin Puree
2-3 overripe bananas
3 Tbsp. melted Organic Virgin Coconut Oil
2 Tbsp. Agave Syrup or Honey
1 Tsp. Baking Powder
1 Tsp. Vanilla
1/8 Tsp. Salt

*add in chocolate chips if you like!*

    Pre-heat oven at 350 F degrees.

    Mix coconut flour and baking powder in a separate bowl.  In a mixing bowl, beat pumpkin puree and eggs.  Then add agave/honey, coconut oil, vanilla, and salt. Continue to mix.

    Add in coconut flour with baking powder and mashed bananas.

    Blend well.

    Grease 12 muffin cups with coconut oil.

    Bake for 20-25 minutes.

    *Remember, these muffins do not look pretty!  *
