Fire Roasted Cedar Planked Atlantic Salmon



No wind and a gorgeous evening called for "dinner to be cooked over the fire", DaddyO exclaimed!  

Alrighty, so we got things prepared...


Step 1:  Soak the planks.  Two hours is recommended.


Step 2:  Marinate the fresh Atlantic Salmon

1/2 cup  BBQ Sauce
1/4 cup Maple Syrup







Step 3: Set soaked planks on hot grill, lightly brush with vegetable oil, and cover (we used a roasting pan). Arrange fillets on the plank. Brush some additional marinade over salmon and cover. Cook without peeking for 12 minutes.


Note: We continued to peek for fear of the salmon starting on fire! DaddyO made sure to keep water on hand, for moisture touch-ups.

Please note: the plank did bow, so don't be shocked!

Step 4: Brush an additional 2 tbsp. worth of barbecue sauce over salmon and cook for 5 to 10 minutes longer, until opaque and just cooked through.

The Full Set-up... complete with Alberta beef!



VOILA! 


The plank looks like it took quite a beating, but the Atlantic Salmon was just right!
